Bottled Harvard Beets

Recipe is from Aunt Nellie.

1 quart cider vinegar
½ quart water
2 lbs brown sugar
1 tsp salt

Cook beets and dice. Fill bottles. Combine ingredients and cook until hot and sugar has dissolved. Pour hot liquid over beets and seal. When opened just add a little cornstarch thickening and heat.
