2 cups sugar (or a little less)
4 TB flour (a little extra is OK)
2 beaten eggs
2 cups rhubarb cut in small pieces
Mix together sugar and flour. Add eggs and rhubarb. Bake in 2-crust pie, sealing edges well.
Notes from Jo Anne:
· 1 recipe makes 2 small pies
· 1 ½ recipes make 3 small pies
· 1 ½ recipes make 2 Marie Callendar-size pies (for this, use about 2 ½ cups sugar. Just right.)
