3 or 4 cups rhubarb, cut in 1” pieces
1 ½ cups sugar
3 TB minute tapioca
1 cup pineapple tidbits, drained
Few drops of red coloring
Line 9” pie plate with crust, pour in rhubarb mixture, dot with butter. Put on top crust, sprinkle with sugar, and bake at 350 degrees for 30 to 40 minutes until brown.
